In the early 90s, I fell in love with a tiny counter service taqueria in Southern California. Together with my wife, Linda, we worked to create Don Quixote’s Mexican Grill which opened December 13, 2006. Our concept was to bring customers traditional Mexican cuisine combining the speed and convenience of fast food together with the atmosphere of a sit down restaurant.
